    鸡爪在中美两国的“待遇差别”——从一则新闻谈起

    前日看《匹兹堡论坛报(午间版)》(Trib p.m.)时,发现一则讲受中美贸易战波及的鸡爪买卖问题,内有一段颇有意思,摘录如下:
     
    …China is a huge market for U.S. chicken feet, commonly called paws, and bought 421,000 tons, or $280 million worth, in 2008, according to the USA Poultry and Egg Export Council, a trade group. In China, paws are popular in soups, stews, and as snack items, but very few are sold in the United States. Without the Chinese market, most of the paws will have to be processed into feed or other non-food uses, which brings less money to U.S. chicken companies.
     
    在此先不谈中美两国贸易依存度等问题,光从上述新闻里透出的鸡爪在中美两国的“待遇差别”方面,就足以讲半天了。
     
    在中国,鸡爪又被称“凤爪”,可是颇受欢迎的一道菜,不仅生的买回去可以熬汤,而且路边小店常有卖熟的。比如在南京,有很多小店同时卖鸭肉、牛百叶还有凤爪;而这些凤爪不仅仅有爪子,还保留爪子上方那段小腿骨,且都是卤过的,并加了好多的红辣椒,所以爪子上一般都能看到辣椒壳和籽。民众一袋袋买回去以后,则可以大啖一顿,相当过瘾。而且,更因很多人知道鸡爪软骨很多,甚至煮熟后的骨头都能嚼碎,里面的骨髓和汤汁都能吸,所以说多吃鸡动的部分对人的骨关节可是有好处云云。
     
    在美国,虽然依我在匹城之所见,其实也有少数店铺卖鸡爪,但是除嗜食鸡爪的华人移民以外,一般美国民众是不重视也不购买的;而且此间鸡爪真的只卖爪子,没有爪子上方那段小腿骨,如匹城这儿的百合中国店(Lotus Food)和隔壁的侯利肉类店(Wholey Co.)便是如此。
     
    不过,非常有意思的是,百合售价是每磅2.39美元,而侯利则是每磅1.99美元。想来应是百合仗着很多华人宾客盈门,以为卖鸡爪方面就是“独此一家”,所以表现出某种“寡占傲慢”,售价当然比较贵;而侯利尽管是洋人经营的,但颇懂华人移民的心理,所以售价有意长期维持在比隔壁百合点要便宜的水平。我第一次买鸡爪时,是在百合店;但当发现侯利卖的比较便宜,从此便转到那儿去买一包回去慢慢用我的汉宫卤包、水、木耳和白萝卜熬汤去。
     
    而更有意思的是,某回我在侯利买鸡爪时,曾碰到一黑人看到我拿了一包鸡爪,惊讶地问我:“这个东西(指鸡爪)好吃吗?”“怎么做比较好?”于是我便告诉他,这个是要煮汤的,但煮熟之后很好吃。结果他再问一个问题:“那鸡爪肉多不多?”无奈之下,我据实以告,“不多。”这回他打退堂鼓了,“谢谢你,只是我不想买了。”由此可见一斑——一般美国民众买鸡胸脯肉(chicken breast)或鸡大腿肉(leg quarter;即除一般华人常讲的鸡腿以外,还包括大腿上方的那段)比较多,很少有人买鸡爪的,所以鸡胸脯肉和鸡大腿肉大行其道也就不奇怪了。
     
    最后,从新闻报道中亦可发现美国如何处理过剩鸡爪的,就是一旦卖不到中国,就拿它们加工成饲料或挪作他用,如此,则在贸易全球化及商人逐利角度上看,损失可谓不小。

    Sometimes I couldn't help laughing when reflecting upon that part of dialogue, which reveals the difference of attitude toward chicken feet between Chinese and other ethnics.

    你个人对鸡爪态度是无所谓,但你LG倒是个制约因素。

    另外,这儿的LEG QUARTER=DRUMSTICK+CHICKEN THIGH,其中DRUMSTICK就是一般人所称的鸡腿,而CHICKEN THIGH则是鸡屁股跟鸡腿之间的那段;这三种东西在美国都有卖的,有时是LEG QUARTER售价为99美分一磅,DRUMSTICK和CHICKEN THIGH售价可以一样的(但当然随商家意愿而起伏喽)。
